4# beef roast
1/2 cup diced green pepper
1/2 cup diced onion
1/2 cup soy sauce
1/2 cup apple cider vinegar
1/2 teaspoon onion salt
1 teaspoon garlic powder
Place roast in crockpot; top with green peppers and onions. Mix all other ingredients, pour over roast. Cook on hi for a few hours; then turn to low for five or six more hours. About an hour before serving, remove roast from crockpot and shred. Return meat to crockpot and keep warm until ready to serve. Serve on buns.
This recipe came from a friend who got it from her mother-in-law. We’ve made a few adjustments over the years, and this recipe has become a favorite. It’s kind of like an Arby’s RB sandwich, especially when served with a slice of cheese and a bottle of Sweet Baby Ray’s BBQ.
